Also cool and refreshing was the gazpacho, as fine as any I have ever experienced, with just a hint of an edge furnished by the bits of jalapeño. Instead of the purée de papas we had papas aplastadas (smashed potatoes), and they and the cauliflower were excellent accompaniments to the tasty pork. Crushing the potatoes instead of mashing them was a great idea.
For me, the greatest surprise of the evening was the flan. Now I love flan. It's sort of like caramel cake: even when it's not all that good it is still good. Too often it seems to be something made last week and kept in the refrigerator. And yes, I can enjoy that. And yes, flan has become almost trite from overuse. But this! Fresh, light, moist, the caramel sauce exquisite. Flan redeemed!
